Daniel Hernandez is a Master Appliance Technician focused on La Cornue cooking appliances — ranges, vaulted ovens, stoves, and cooktops. Over his career he has worked on the full Château and CornuFé lineup, from the compact Château 60 to the Grand Palais 180, and understands the quirks of each: the radiant heat of the vaulted “voûte” oven, the seasoning and care a cast-iron French Top demands, and the differences between gas, dual-fuel, and induction cooking.
Daniel’s diagnostic work spans both worlds of La Cornue engineering — the mechanical side, where a gas burner that will not stay lit usually means a tired thermocouple or safety valve, and the electronic side, where an induction range top can throw an E2 overheat cut-out or a U400 connection fault. He is particularly experienced with glow-bar igniters, oven thermostat calibration, hi-limit safety thermostat resets, and convection element and fan repairs on the multifunction CornuFé ovens.
Because every La Cornue cooker is hand-built to order in France with brass, vitreous enamel, and cast iron, Daniel approaches each repair with the correct parts and a respect for the craftsmanship, so the appliance looks and cooks exactly as it should after service.
