The La Cornue oven lineup

La Cornue does not sell standalone wall ovens — its ovens are built into the hand-crafted Château and CornuFé ranges, made to order in France since 1908. The defining piece is the vaulted “voûte” oven found in every Château from the 60 through the 165 and the Grand Palais 180. Larger Châteaux are dual-fuel, carrying both a gas voûte and a separate electric voûte; the 165 adds a grand gas oven, and the Grand Palais pairs two grand vaulted ovens (a gas cavity near 3.1 cubic feet and an electric cavity near 2.7 cubic feet). The CornuFé 90 “Albertine” offers one seven-mode multifunction convection oven plus a drawer, while the CornuFé 110 has two electric convection ovens. How the vaulted oven works

The voûte is a sealed, domed cavity — there is no window on a Château oven — engineered so the curved ceiling reflects radiant heat down and around the food. This produces gentle, even roasting and baking without forced air. Dual-fuel Châteaux let cooks choose the moist, lively heat of the gas voûte or the precise, dry heat of the electric voûte, and run both at once. CornuFé multifunction ovens add convection, broil, proof, and several other modes through a fan and ring element for everyday versatility.

Materials and craftsmanship

Oven cavities are finished with vitreous enamel and, on many models, catalytic liners that help oxidize cooking residue. Like the rest of the range, the oven fronts are offered in roughly 50 enamel colors from the Suzanne Kasler and Étoilé collections, with brass, nickel, chrome, or copper trim. Because each oven is hand-built, igniters, elements, thermostats, and liners must be matched to the specific model and US SKU.

Gas voûte versus electric voûte

On dual-fuel Châteaux the two ovens are not redundant — they are complementary. The gas voûte produces a lively, slightly humid radiant heat that many cooks favor for roasting meats and finishing breads, while the electric voûte delivers steady, dry, precise temperatures ideal for baking and pastry. Running both at once lets a cook stage a full meal across two distinct climates, which is part of why these ranges are prized in serious kitchens. From a service standpoint the two circuits are diagnosed differently: the gas oven centers on the glow-bar igniter, safety valve, and thermostat, while the electric oven depends on its element, sensor, and control. Identifying which cavity is misbehaving is the first step toward a correct repair.
