La Cornue ranges are the heart of the French marque, hand-built to order since 1908 and now produced under The Middleby Corporation by a team of roughly 50 to 60 Compagnons. The Château family runs from the 60 cm Château 60 through the 75, 90, 120, 150, and 165, culminating in the 180 cm Grand Palais — each defined by its vaulted “voûte” oven. The freestanding CornuFé 90 “Albertine” and CornuFé 110 are the factory-built, pro-style ranges: the 90 offers a single seven-mode multifunction convection oven, while the 110 carries two electric convection ovens. Dual-fuel power and rangetop modules

Larger Château ranges are dual-circuit dual-fuel: a gas vaulted oven works independently of an electric vaulted oven, with the 165 adding a grand gas oven plus an electric voûte and two storage drawers. The rangetop is fully configurable with brass “flammes” gas burners (front burners near 17,000 BTU on natural gas), a cast-iron French Top simmer plate engraved with La Cornue’s signature étoiles, induction zones rated to 3,700 W on boost, a lava-rock grill, an electric teppanyaki, or the Flamberge rotisserie. CornuFé ranges use five brass gas burners or a five-zone induction surface.

Finishes, trim, and the made-to-order ethos

Every Château is built to a customer’s specification in about 50 enamel colors — including the Suzanne Kasler Couleur and Étoilé Collections — with brass, nickel, chrome, or copper trim. The “Château Suprême” tier denotes premium custom finishes on the Grand Palais.
