La Cornue Ranges

La Cornue Ranges combine hand-built French craftsmanship with serviceable, repair-friendly engineering. This page covers the lineup, the technologies behind them, and the faults our certified technicians resolve.
The La Cornue range lineup
La Cornue ranges are the heart of the French marque, hand-built to order since 1908 and now produced under The Middleby Corporation by a team of roughly 50 to 60 Compagnons. The Château family runs from the 60 cm Château 60 through the 75, 90, 120, 150, and 165, culminating in the 180 cm Grand Palais — each defined by its vaulted “voûte” oven. The freestanding CornuFé 90 “Albertine” and CornuFé 110 are the factory-built, pro-style ranges: the 90 offers a single seven-mode multifunction convection oven, while the 110 carries two electric convection ovens. Both are available in dual-fuel or full-induction. See the current catalog on the La Cornue website and browse serviceable configurations in our model directory.
Dual-fuel power and rangetop modules
Larger Château ranges are dual-circuit dual-fuel: a gas vaulted oven works independently of an electric vaulted oven, with the 165 adding a grand gas oven plus an electric voûte and two storage drawers. The rangetop is fully configurable with brass “flammes” gas burners (front burners near 17,000 BTU on natural gas), a cast-iron French Top simmer plate engraved with La Cornue’s signature étoiles, induction zones rated to 3,700 W on boost, a lava-rock grill, an electric teppanyaki, or the Flamberge rotisserie. CornuFé ranges use five brass gas burners or a five-zone induction surface.
Finishes, trim, and the made-to-order ethos
Every Château is built to a customer’s specification in about 50 enamel colors — including the Suzanne Kasler Couleur and Étoilé Collections — with brass, nickel, chrome, or copper trim. The “Château Suprême” tier denotes premium custom finishes on the Grand Palais. This bespoke nature means no two ranges are identical, so accurate diagnosis depends on identifying the exact configuration and US SKU (for example G45, G48, or the CornuFé C9 and C1 series).
Château versus CornuFé
Choosing between the two families comes down to construction and cooking style. The Château is the hand-built, made-to-order flagship: its vaulted ovens, fully custom rangetop, and bespoke finishes place it at the top of the residential market, and it is sized and configured to order, which can mean a lead time of several months. The CornuFé 90 “Albertine” and CornuFé 110 are factory-built pro-style ranges that deliver the same brass-burner cooking and signature styling in standard sizes with shorter availability. Both are serviced by the same techniques, but the Château’s dual-fuel circuits and specialty modules add complexity that rewards a technician who knows the brand. If you are weighing a purchase or a repair-versus-replace decision, our model directory lays out the differences side by side.
Common La Cornue range problems
- Surface burner ignition failure — clogged ports or a failed spark module.
- Weak or burned-out bake igniter — the gas oven won’t reach temperature.
- Oven temperature drift — thermostat calibration needed on gas voûte ovens.
- High-limit thermostat trip — safety cut-out (06ELTS01) needs reset or replacement.
- Uneven baking or convection fan noise/failure — common on multifunction CornuFé ovens.
- Electric element or control board fault — affects the dual-fuel electric oven circuit.
- Door won’t seal or catalytic panels not self-cleaning — gasket and liner wear.
- Drawer misalignment — on the 165 and Grand Palais 180.
Induction and multifunction models may show codes such as E2, U400, or “Er” plus a number — full diagnostics live in our error code directory.
Maintenance essentials
- Season the French Top and dry it after cleaning to prevent rust.
- Polish brass burners and trim; wipe induction glass with a dedicated cleaner.
- Calibrate the oven thermostat if baking runs hot or cold.
- Inspect the door gasket and catalytic liners annually.
- Keep burner ports clear for even flames.
